A Small Taste Of Italy With Thomson Al Fresco


It's been an exciting few days here in the Mummy Of 3 Diaries household. I've been enjoying a small taste of Italy right here at home. Thomas Al Fresco were looking for delicious recipe ideas to accompany some of the countries they offer fantastic holidays in. Seeing as my favourite food is pasta, of course I opted for Italy. I was sent a wonderful hamper to help me on my journey and boy was I spoilt for choice. It was full of inspiring Italian themed products.

I took my amazing hamper to my Mum's who helped me wit this challenge, she's the best cook I know. We decided on a simple yet tasty recipe that would make the most of the ingredients that we had in front of us. We went for a Spaghetti Bolognese with a Pepper and Aubergine twist.

What We used:

One jar of Peppers and Aubergine Tapenade
A small spoon of Black Olive Tapenade.
A splash of Red Wine
2 LBs of Fresh Mince Meat
A pinch of salt
A handful of fresh spaghetti
A small amount of grated cheese

We mixed in the jar of Peppers and Aubergine Tapanade with a spoon of the Black Olive Tapanade into a big pan. We then added a tin of tomatoes and stirred it all together. We then added the fresh mince meat and left too cook, stirring occasionally. At the same time we boiled the fresh spaghetti and popped some garlic balls into the oven. It was really easy to do.


Our meal was so easy to do, even I could do it. It didn't take very long either, it was all ready to eat in less than half an hour, perfect. We also made some wheel shaped pasta for the kids which we served with the same meat and sauce, I just thought it might make their dinner look a little more interesting. It turned out they actually preferred the spaghetti like us.

It was amazing! The flavours were truly delightful, I'm not a fan of fish and I've never eaten aubergines before but it tasted fantastic. I had blended all the sauce before cooking as I'm quite a fussy eater and don't like lumps in my food. The flavours were all still there just minus the big lumps which was perfect for fussy old me. The spaghetti was lovely and the mince meat just tasted so nice. I was very pleased with myself I must admit even if I did get a little help from my Mum. I had successfully made dinner for my whole family and it actually tasted really good.

My Spaghetti Bolognese with a Pepper and Aubergine twist was a huge hit, there was clean plates all round. I even had a second serving. Thank you Thomas Al Fresco for being the inspiration behind our new recipe and helping us create our delicious meal.
